I'm just wondering if others insure their project cars while they are apart. If so, how is that done, and how do you account for the continuously changing value as you add parts and work?

When I insure my cars, I get comprehensive insurance, as well as all the other stuff. It adds about $10 to the premium. When the car is apart in the garage, or stored for the winter, I reduce the insurance to comprehensive only. The premium is then only $10.
I had to move one of my MGBs outside of the shop While shifting other cars around. We had a big snow and a load of snow and ice slid off of the metal shop roof and destroyed the convertible top, the comprehensive insurance paid for a new top. $10 was pretty cheap insurance!
